greens

Kale Chips…..HA.

Not to be confused with curly mustard…..don’t put two leafy greens that look the same next to each other grocery employees, especially when one is extremely SPICY and NOT Kale. You know, customers might mistake the two, and accidentally use curly mustard in their attempt at a healthy smoothie and accidentally burn their throat. JUST saying. I’ve heard this kind of stuff happens.

Okay, so maaaaaybe I’m the only goof ball with that kind of luck. I swear I looked at the labels…ugh.

Point being, I’m trying to find a non bloaty way to incorporate Kale in our daily diets. First, I tried it raw, n’ every single time, bloat. Then, tried frying it, steaming it, etc…nothing but pain. Pain in the stomach, chest, and butt. Totally turned off after feeling like I was going to have a heart attack and baby all at the same time.

Been months since I’ve had it, and recently I saw bags of the stuff in stores as, “kale chips.” I was interested until I saw that they were priced at $7.00, yowza, too expensive for something that may just make me feel like a bloated dog again. So, decided to make some at home.

All I needed to buy for this recipe was the bunch of kale, had everything else, so already I was ahead of the game. I hate it when people say that, “ahead of the game, or game changer.” Whatever. So, I made the dang kale chips, and they were tasty. Doubt they still have the same nutrients being cooked in this manner, but they’re probably not a bad snack option. It’d be great to serve to friends & family, maybe over a salad or soup. Glad I found a way to eat the leafy greens, I still feel a tad bit queazy when I have ’em but not nearly as bad as every other way. They were really good I tell you, between the fiancé and I, they were gone faster than I thought they would be.

A win. Thumbs up to you kale chips…definitely baking you again.

Keep Your Carbs Colorful.

We eat colorful veggies too…we don’t discriminate here in our home. My healthy friends don’t believe us when we say we know what cous cous and vegetables are. Hopefully these dishes will encourage my family, yes my own family to eat healthier.

Its just as easy to eat healthy as it is the latter, so don’t make any excuses for yourself and that belly. I know I could be better at health, but would rather be better at cake – kidding kidding. We try to keep things balanced in our home and bellies.

Though it can get pricey eating organic/healthy foods, you really shouldn’t put a price on health. Choosing health over a new pair of shoes, salon hair, nails, makeup, dresses, etc.etc. is tough sometimes. But, being that I don’t drink alcohol, don’t smoke, am 100% drug free…I mean, what else am I supposed to spend money on? 🙂 So, I choose food. Like anything else you know, it takes work to be healthy, there’s a certain respect I have for people with that kind of discipline…its a discipline I strive for, slowly.

Yaaaaddi yaddda, back to food, green foods..I was too lazy to throw everything on our grill because it takes a bit more work…the thing is just not big enough to cook everything, AAAAAND everything needed to be cooked at different temperatures. Easier to cook things on the stove in separate pans, so I did and so can YOU.

Useful ingredients: cous cous, soba noodles, veges, olive oil, vinegar, lemon/lime juice, and herbs. And, I love tilapia, we always have it in our freezer, filleted tilapia is easy to cook and tasty…but I’m hoping that its not the endangered tilapia because I’m just guiltlessly slaying away at ’em weekly.. 😦 *gulp.

Daily Dose of Goodness.

Daily brunches for us consists of: carrots, apples, peppers, ginger, and sometimes a slice of toast. And if I’m feeling really guilty about not eating enough greens, I’ll go ahead and juice: broccoli, fennel, parsley, mustard greens, kale, spinach, lemon, celery, cucumbers and just about anything. If you can’t stand the taste of “dirt,” then throw in some kiwi, unless you hate that as well, I’d suggest skip juicing, go with steaming. 😉 Also, we drink our juice soon after we’ve made it, I hear that the nutrients in the juiced fruit and veges are sensitive to air, heat, time and light….so the sooner you drink, the better the benefits! Don’t let it slip away.

Breville is my brand when juicing, toasting, grilling, woking, or blending. They are so awesome, hands down my favorite kitchen appliance brand so far. Kinda pricey, but a good investment, for quality & longevity “tools.” I just wish they would clean themselves, it SUCKS bananas keeping these things clean, but maybe I’m just too o.c.d. when it comes to cleaning.

Hope you have fun juicing, don’t get stuck using the same ingredients, making the same juices, mix and match so you don’t get sick of it. Here’s to a long, healthy, happy life!
